大米蛋白主要由清蛋白、球蛋白、醇溶性蛋白和谷蛋白等四种蛋白组成，大米渣中主要是胚乳蛋白，由白蛋白(4%～9%)、盐溶性球蛋白(10%～11%)、醇溶性谷蛋白(3%)和碱溶性谷蛋白(66%～78%)组成。
