皂化原来指动、植物油脂与碱作用而成肥皂(高碳数脂肪酸盐)和甘油的反应,现在一般指酯与碱作用而成对应的酸(或盐)和醇的反应。是水解的一种,如醋酸乙酯加氢氧化钠生成醋酸钠和乙醇。
