甜菊苷(Stevioside)为甜叶菊中所含有的主要强甜味成分,又称斯替维苷,是一种双萜配糖体,属于四环二萜类化合物,在C-4位的α-羧基上连接一个葡萄糖,C-13位上连接有二糖。甜菊苷常态下为白色或微黄色松散粉末或结晶,常温下稳定,甜度约为蔗糖的300倍,味感与蔗糖相似,甜味纯正,无异味,残味存留的时间比蔗糖长, 热量仅为蔗糖的三分之一, 非醇解, 热稳定性好, 毒性低而且适用范围广。被称为是继蔗糖、甜菜糖之后的第三种天然糖源。
