大分子指相对分子质量在5000以上，甚至超过百万的生物学物质，如蛋白质、核酸、多糖等。它与生命活动关系极为密切，由被认为单体的简单分子单位所组成。在溶液中有形成凝胶的物质。一般把相对分子质量超过一万的化合物称为大分子化合物或高分子化合物。它是由许多重复的结构单元组成，一般具有线状结构，有的具有枝状结构。许多具有重要生物作用的物质，如蛋白质和核酸等均属于这类化合物。大分子蛋白质的基本组成单位或构件分子（building-block molecule）是氨基酸（amino acid，AA）。
