凤尾虾是南京的传统名菜,属金陵菜,是金陵菜(京苏大菜)的代表之一,与松鼠鱼、蛋烧卖、美人肝并称为“京苏菜四大名菜”,文献《白门食谱》中就有它的记载。 主要材料有河虾、鸡蛋清、豌豆等,虾肉洁白、尾壳鲜红、形似凤尾,衬以绿色青豆,色彩艳丽、虾味鲜嫩,佐以鸭油烹调,其味更美。不仅营养丰富,养血固精,而且能够延缓衰老,提高机体的抗病能力和免疫功能。
