砂锅(外文名:Casseroles )是一种炊具。传统砂锅是由不易传热的石英、长石、粘土等原料配合成的陶瓷制品,经过高温烧制而成,具有通气性,吸附性,传热均匀,散热慢等特点。依靠砂锅的菜谱有砂锅鸡、砂锅豆腐、砂锅鱼头等。 由于制作工艺与原料问题,传统砂锅不耐温差变化,容易炸裂,不能干烧。针对传统砂锅的这一问题,近十年,经过研发改良后,在原料上加入了锂辉石,制造出耐高温砂锅,使得砂锅保持原有优点的情况下,还能够承受数百度高温干烧而不裂,大大提高了砂锅的实用性。
