燕麦味甘、性凉，是营养价值极高的禾谷类作物之一，补气益力，除湿止泻。其中裸燕麦俗称莜麦或油麦，燕麦经过淘洗、晾晒、炒熟、磨制成面，即燕麦面，也叫做莜面。燕麦面是粗粮面粉。
