榨菜，被子植物门，双子叶植物纲的一科。多为草本植物。榨菜是芥菜中的一类，一般都是指叶用芥菜一类，如九头芥、雪里蕻、猪血芥、豆腐皮芥等。榨菜是一种半干态非发酵性咸菜，以茎用芥菜为原料腌制而成，是中国名特产品之一与法国酸黄瓜、德国甜酸甘蓝并称世界三大名腌菜。在1898年始见于中国四川涪陵（今重庆市涪陵区），时称“涪陵榨菜”。因加工时需用压榨法榨出菜中水分，故称“榨菜”。现已发展到四川省内30多个市县，浙江、福建、江苏、上海、湖南、广西、台湾等省(直辖市、自治区)也有生产。
