Ingredients材料

一片云尼拉海绵蛋糕one thin sheet vanilla sponge cake
(A)慕斯Mousse
(B)2汤匙明胶粉two tbsps Gelatine powder
80克水 80g water
(C)15克薄荷叶15g Mint leaves
150克水150g water
(D)150克牛奶水150g milk
60克糖60g Sugar
(E) 3粒蛋黄3 Egg yolks
250克植物性鲜淇淋250g whip tapping crean

Method 做法

1.将(E)的鲜淇淋打法至湿性发泡备用。
2.将(A) 放在双煮盘热水上煮至溶解。
3. 将(B)煮沸,待冷二十分钟,然后放入果汁机内打烂,过滤备用。
4.将(C)煮熟,倒入(D)内搅均匀。
5.加入(B)拌匀,续煮至浓稠。
6.加入(A),搅拌均匀。
7.然后放在冰水上搅拌至室温或30°c,马上加入(E)拌匀。
8.蛋糕切成适用于圈模的尺寸,将蛋糕放在圈模内,倒上慕斯,抹平,放入冰箱冷藏至结冰
9.将蛋糕从模型,放上饰品

1.Whip (E) until soft peaks form.
2.Mix (A). Cook over double boiler until gelatine dissolves.
3.Cook (B) until it boils. Set aside for 20 minutes .Place in blender and puree it. Strain.
4.Cook (C) until it is hot. Pour it into (D) and mix until well blended.
5.Add (B) and mix until well combined. Cook until it thickens.
6.Add (A) and mix until well blended.
7.Cool it in an ice water bath until mixture at room temperature or 30°c. Add (E) immediately and mix until well
incorporated .
8.Cut the cake to fit the ring mould. Put the cake at the bottom of the mould and pour the mousse from step (7) over it.Smooth the surface and refrigerate until firm.
9.Unmould the cake and decorate (as shown ).
