鳕是底层冷水性鱼类，Gadus macrocephalus （Tilesius, 1810），硬骨鱼纲鳕形目(Gadiformes)鳕科 (Gadidae)鱼类的统称。为世界性、冷水性重要上层或底层海洋鱼类。广泛分布于大西洋和太平洋北部水域，个别种类如江鳕(Lota lota) 栖于江河。鳕鱼的身体为长形，稍侧扁，尾部向后渐细小。其头大口大，吻突，上颌略长于下颌，下颌的前端下方有一触须，两颌及犁骨均具绒毛状牙。
