餐饮垃圾，也叫餐厨垃圾（俗称泔水、泔脚），是指剩饭菜、餐桌废弃物及厨房下角料的总称。其主要成份是米、面、淀粉类，骨、肉、油、皮、刺、鳞等，其中富含维生素、淀粉、蛋白质、油脂、食用纤维、脂肪酸、糖、盐等营养物质，以及钙、钠、镁、钾、铁等矿物质。
