在日本研究开发功能水非常盛行。如研究电解、磁场、电场、远红外、陶瓷等处理过的水的功能。其中研究最活跃的是电解水，即水通过电解，在阳极产生酸性水，在阴极产生碱性水。它们具有一般水所没有的功能(表1)。尤其是阳极产生的强酸性水亦称氧化水、超氧化水，由于其对微生物有瞬间杀菌作用，故最引人注目。
