辣子豆腐是陕西合阳县一带的经典小吃。主要原料是豆腐、辣椒面、白菜、萝卜等,口味是香辣,工艺是烫、煎、炒。先把豆腐切块放入带调料的汤中煮20分钟;再煎好“哨子”。内容有油炸豆腐、萝卜丁、莲菜丁、肥肠等;再烧好猪油、清油相搀合的油泼辣子,只取上部辣子油备用。吃时先舀豆腐,再搭梢子,最后淋上辣子油,味美可口,有“宁吃一碗辣子豆腐,不吃十碗席”之说。
