话梅是芒种后采摘的黄熟梅子(俗称黄梅)经过加工腌制而成。黄梅从树上采下洗净,放大缸里用盐水泡浸月余,取出晒干;晒干后用清水漂洗,再晒干;然后用糖料泡腌,再晒干,如此多次反复,最后成为肉厚干脆、甜酸适度的话梅。 最初,话梅是说书先生用来润口的,因说的时间长了,口干舌燥,便含一颗盐渍梅子在口中(那时候又不如这般便利,饮用水说来便来),酸咸的味道刺激味蕾,使唾液分泌津液满口,便可继续说下去。(说书先生的“书”称“话本”,其梅亦称“话梅”)
