表皮细胞，一般是指动物与植物外层的细胞，它的主要作用是保护，同时还兼有其他功能，如分泌角质层等。绿色植物的表皮还有气孔，用于调节气体进出。 表皮细胞中一般不具叶绿体，表面观多呈不规则形，侧壁往往凸凹不平，彼此互相嵌合，紧密相连，除气孔外无间隙；横切面观呈长方形或方形，外壁较厚，并敷有角质层。但是角质层也不是完全不通透的，生产上采用叶面施肥，便是应用铝液喷洒于叶面后，一部分通过气孔进入叶内，一部分透过表皮角质膜进入。
