荷叶鸡是江苏省传统的特色名菜，属于淮扬菜系，为夏令时菜。肉质细嫩，滋味鲜美，营养丰富，能滋补养身。以鸡脯肉为主料，配以猪板油，蒸后较为滋润，油而不腻。有补虚损、益五脏、实筋骨、活血脉、耐寒暑、清热法等功能。
生煎猪肉，包在荷叶中，塞进鸡肚后用厚厚的黏土包裹起来，再放进烤炉中烘烤。
