茎刺 stem thorn，又称枝刺。由幼枝变态而成的长形刺状物。茎刺位于叶腋,其维管组织通连茎的内部,不易折断。柑橘、山楂的茎上具有茎刺,皂荚的茎刺能形成分枝,石榴、梨中可看到由生叶和花的小枝逐渐过渡到茎刺的情况。
与刺不同，皮刺能够被轻易地从植物茎上剥落，因为它仅仅是植物外层的一种特征，而不像刺那样是树木的一部分。
