舞茸，在我国因较早以“灰树花”之名收录于《中国的真菌》，所以国内习惯叫“灰树花”。原产于日本北部山区，味道佳口感好且有传承药效，自古以来备受推崇，其名也因为在深山找到它的人会兴奋得手舞足蹈而得名。这种传奇的菇类直到80年代中期才人工栽培成功，此后以日本为主的科学家在化学、生化学、药理学等方面对舞茸进行了广泛的研究，证明了舞茸是最有价值的食药两用菇类。
把舞茸菇、栗子和日本白果用热油稍微炸香，捞起沥干待用。
Fry chestnuts, maitake mushroom and Japanese ginkgo in hot oil. Drain and set aside.
重新加热少许清油，加入干辣椒和花椒炒香，加入五花肉、栗子、舞茸菇和白果一起翻炒均匀。
Heat up some oil in new pot. Add in dried chilli, Sichuan pepper and stir-fry until fragrant. Add in pork belly, chestnuts, maitake mushroom and Japanese ginkgo. Toss well.
以上结果表明，腹腔注射丝裂霉素和舞茸，丝裂霉素可以直接杀死癌细胞，而舞茸可以激活人体免疫系统达到杀灭癌细胞的作用。
The result indicates some synergistic effect between MMC and Maitake, i. e., tumor cells are directly attacked by MMC while the immune system is activated by D-fraction.
