脂肪变性是细胞浆内甘油三酯（中性脂肪）的蓄积称为脂肪变或脂肪变性。常因营养障碍、感染、中毒和缺氧等引起。多发生于代谢旺盛、耗氧多的组织，如肝细胞、心肌纤维、肾小管上皮等。光镜下，于切片中，脂滴表现为大小不等的近圆形空泡（因制作组织切片时脂肪被有机溶剂溶解所致），可疑脂肪变性时应进行脂肪特殊染色加以证实。电镜下，细胞胞浆内的脂肪表现为脂肪小体，进而融合成脂滴。消除病因后，变性的细胞仍可恢复正常结构，严重脂肪变性的细胞常可发展为坏死。
