胶束是指表面活性剂溶于水中，当其浓度较低时呈单分子分散或被吸附在溶液的表面上而降低表面张力。当表面活性剂的浓度增加至溶液表面已经饱和而不能再吸附时，表面活性剂的分子即开始转入溶液内部，由于表面活性剂分子的疏水部分与水的亲和力较小，而亲水部分之间的吸引力较大，当达到一定浓度时，许多表面活性剂分子（一般50~150个）的疏水部分便相互吸引，缔合在一起，形成缔合体，这种缔合体称为胶团或胶束，胶团有各种形状，如球形，层状，棒状。
