胃酸过多（hyperchlorhydria）又称作胃酸过高，是胃肠疾病的常见症状之一。适度的胃酸可以帮助消化，但如果胃酸过多就会伤及胃、十二指肠黏膜，造成胃溃疡或十二指肠溃疡等疾病。人胃是持续分泌胃酸的，其基础的排出率约为最大排出率的10%，且呈昼夜变化，入睡后几小时达高峰，清晨醒来之前最低。胃液中的胃酸（0.2%～0.4%的盐酸），可以杀死食物里的细菌，确保胃和肠道的安全，同时增加胃蛋白酶的活性，帮助消化。胃液对消化食物起着重要作用，正常胃液呈酸性，空腹时为20～100ml，超过100ml提示胃酸分泌增多。正常生理状态下胃液分泌维持一定的量，如分泌过多，患者就会感到胃部不适，出现胃部灼烧感、吞酸、反胃、吐酸水等现象。
