糖酯是指由葡萄糖、蔗糖等均具有多个羟基可与脂肪酸酯化得到。糖酯由于酯化度不同，可分为单酯、双酯和三酯。糖酯大都无毒，无刺激性，无味，但十二碳以下脂肪酸酯有苦味。由于糖类具有多个羟基，因此酯化后溶于水且呈透明溶液。
