对一批小麦而言,按我国的标准,硬质小麦是指角质率不低于70%的小麦。硬麦的胚乳结构紧密,呈半透明状,亦称为角质或玻璃质;就小麦籽粒而言,当其角质占其中部横截面1/2以上时,称其为角质粒,为硬麦。硬质小麦蛋白质含量较高、容量较大、出粉串较高,面粉面筋含量较多,延伸性和弹性较好,适于做馒头、面包等发酵食品。
