漂白剂 是破坏、抑制食品的发色因素，使其退色或使食品免于褐变的物质，一些化学物品，透过氧化反应以达至漂白物品的功用，而把一些物品漂白即把它的颜色去除或变淡。常用的化学漂白剂通常分为两类：氯漂白剂及氧漂白剂。
