汽蒸是稻谷经过浸泡以后，胚乳内部吸收相当数量的水分，将稻谷加热，使淀粉糊化并利用蒸汽进行加热的过程。汽蒸的目的在于提高出米率，改善贮藏特性和食用品质。汽蒸的方法有常压汽蒸与高压汽蒸两种。常压汽蒸是在开放式容器中通人蒸汽进行加热，采用100C的蒸汽就足以使淀粉糊化。
