棓丙酯化合物为乳白色针状结晶或白色至淡黄褐色结晶性粉末，无臭，稍有苦味，熔点150℃。对热较稳定，遇光有利于分解，遇铜、铁离子呈紫色或暗绿色，有吸湿性。易溶于热水、乙醇、丙二醇、甘油、棉子油、猪油、花生油和乙醚，难溶于冷水。0.25%的水溶液PH约为5.5。
