维生素B2，又叫核黄素，是B族维生素的一种，微溶于水，在中性或酸性溶液中加热是稳定的。为体内黄酶类辅基的组成部分，如缺乏，就影响机体的生物氧化，使代谢发生障碍。病变多表现为口、眼和外生殖器部位的炎症，如口角炎、唇炎、舌炎、眼结膜炎和阴囊炎等，故本品常用于上述疾病的防治。体内维生素B2的储存是很有限的，需每天都要由饮食提供补充。维生素B2的两个性质是造成其损失的主要原因：（1）可被光破坏；（2）在碱溶液中加热可被破坏。
