有机絮凝剂是指能产生絮凝作用的天然的或人工合成的有机分子物质。天然产物为蛋白质或多糖类化合物，这类絮凝剂（混凝剂）都是水溶性线型高分子物质，在水中大部分可电离，为高分子电解质。可分为阴、阳离子型及两性型等类，阳离子型高分子絮凝剂应用面广，发展较为迅速。
