扁尖，又名扁尖笋、天目笋干，苏州话叫扁节，也有人叫他焙熄。上海、杭州、绍兴传统家常菜。是以竹的芽或嫩鞭为原料， 经盐水煮笋、炭火烘焙后制成的烹饪原料。

前部近圆筒形，后部侧扁，头扁平，眼大口大，吻长而尖，呈三角形，上下颌等长，骨软。
