所谓的“成熟蜜”，是指蜜蜂采花蜜后，将其唾腺分泌物装到巢房中，经过酿造、脱水，使含水量降至20%以下，并使双糖充分转化为单糖，葡萄糖和果糖总的含量达70%以上，自然成熟的蜂蜜，通常须要7天时间，具有真正意义上蜂蜜应具备的营养成分。 与之相对应的“未成熟蜜”，是采回不久的花蜜未经充分酿造，大多是1-2天取蜜，许多营养物质不全面，不充足，不稳定。一般在销售时，还要经过机械脱水浓缩，这种蜜一般称之为浓缩蜜，加工蜜。其并不具备蜂蜜应有的营养价值。
