将海带五两用温水泡透、发足、洗净，切成一寸二分长的细丝。取锅放油八两（实耗一两）烧热，油烧到七成熟时，将海带下锅炸约一分钟，见海带丝漂起速用漏勺捞出沥油，不要把海带丝炸焦。将油倒出留三钱，下精盐、酱油、白糖、酸醋、高汤或凉水少许烧沸，再把炸过的海带丝下锅烧约十分钟，放味精出锅庄盘凉透，用筷子抖松即成。
