八珍原指八种珍贵的食物,后来指八种稀有而珍贵的烹饪原料。其具体所指随时代和地域而不同。 八珍的提法最早见于《周礼·天官冢宰》:“食医,掌和王之六食、六饮、六膳、百馐、百酱、八珍之齐。”应该说中国历代“八珍”的内容各不相同。《周礼·天官·膳夫》:“凡王之馈,食用六谷,饮用六清,羞用百二十品,珍用八物。” 乃是后世之八珍筵席的先驱之作。
