全鸡是鹤庆白族人的传统食品,几乎将要失传了,是民间的十全大补。大病初愈的病人,生了孩子的妇女,做了手术的重病号,都要给他们炖上一只全鸡。这全鸡的炖法,和炖肉差不多,也是用一个瓦罐,外面加一碗,然后封一面团,用粗糠熬就的。不同的是,在鸡上下工夫,对鸡的选用是非常讲究的,当然最好的鸡材,首选是乌骨白凤,没有乌骨白凤也要本地纯种的土鸡,决不能选蛋鸡啊,肉鸡啊之类的,或者用饲料喂出来的现代鸡。而且还要用没有下过蛋的小母鸡。
