作业控制是指生产管理部门在生产作业进程中进行检查、纠正偏差，保证生产顺利进行的管理制度。为了保证按质、按量、按期生产出产品，企业生产管理部门在生产作业的开始及进行过程中，不断地检查，以获得各生产环节实际投入产出进度的信息，与生产作业计划比较、分析，判断是否有偏差，如果存在偏差，及时采取对策与措施，使生产恢复正常，这就是作业控制。
