用人工方法把植物花粉传送到柱头上以提高籽实率，或有方向性改变植物物种的技术措施。有目的地选择亲本进植物杂交育种的必要手段。在果树生产上，对自花不结实、雌雄同株而异花以及雌雄异株的果树；在缺乏授粉树或花期气候恶劣、影响正常自然授粉的情况下，也常需进行人工授粉。 花卉分为雌雄同株和雌雄异株，同株的可以直接在开的花上授粉，异株的需要在其同品种的苗的花上弄花粉来授粉（部分蓝莓例如奥尼尔就是属于异株授粉，需要两颗同一个母本或者相近的进行异株授粉）。
