乙酰丙酸,亦称戊隔酮酸、左旋糖酸、果糖酸,是水解生产的重要产品之一。易溶于水及部分有机溶剂,但不溶于汽油、煤油、松节油和四氯化碳等。常压蒸馏几乎不分解,长时间加热则失水而生成不饱和的γ-内酯。
