The stability of polyphenol from sanguisorba was studied and the chemical structure of the products was analyzed. The results are as follows:The root of sanguisorba is abundant in starch (16.1%), tannis (8.85%), oligoprocyanidins (5.7%) and flavone (14.56% ).
