The color of dushi pigment in different PH was observed. Studied kinetics of dushi in different temperature and the effect of the dissolved oxygen on heat degradation. The results showed that the heat degradation of dushi pigment is first-order reaction kinetics and adding dissolved oxygen can quicken heat degradation. Calculated the apparent rate constants at 25 ℃ and activation energies of dushi pigment. The calculated results coincide with observed at 25 ℃.
