黑牛肝菌，是一种可食用的蘑菇。在欧洲，黑牛肝菌经常被拿来食用。外边和菌肉都是黑色的。味道鲜美，是最香的牛肝菌之一。夏季生马尾松，油茶林中地上。我国特有品种。
目的 ：探讨黑牛肝菌的降血脂及抗氧化作用。
Objective:To study the effect of Boletus aereus to lowering blood lipid and antioxidation in the hyper-lipidemia rats.
结果表明：对黑牛肝菌进行缓慢冻结时，出现了明显的冻结三阶段现象，而在液氮速冻时此三阶段不明显；
The results show that there are three freezing stages by slow freezing, but the three freezing stages are not obvious by liquid nitrogen flash freezer.
