飞机制造(aircraft manufacturing)是指按设计要求制造飞机的过程。通常飞机制造仅指飞机机体零构件制造、部件装配和整机总装等。飞机的其他部分，如航空发动机、仪表、机载设备、液压系统和附件等由专门工厂制造，不列入飞机制造范围。但是它们作为成品在飞机上的安装和整个系统的联结、电缆和导管的敷设，以及各系统的功能调试都是总装的工作，是飞机制造的一个组成部分。 飞机机体制造要经过工艺准备、工艺装备的制造、毛坯的制备、零件的加工、装配和检测诸过程。飞机制造从零件加工到装配都有不同于一般机器制造的特点。
