过饱和溶液是指一定温度、压力下，当溶液中溶质的浓度已超过该温度、压力下溶质的溶解度，而溶质仍未析出的溶液。该现象叫过饱和现象。过饱和溶液是不稳定的，如果搅拌溶液、使溶液受到震动、摩擦容器器壁、或者往溶液里投入固体“晶种”，溶液里的过量溶质就会马上结晶析出。
