辣子豆腐是陕西合阳县一带的经典小吃。主要原料是豆腐、辣椒面、白菜、萝卜等，口味是香辣，工艺是烫、煎、炒。先把豆腐切块放入带调料的汤中煮20分钟；再煎好“哨子”。内容有油炸豆腐、萝卜丁、莲菜丁、肥肠等；再烧好猪油、清油相搀合的油泼辣子，只取上部辣子油备用。吃时先舀豆腐，再搭梢子，最后淋上辣子油，味美可口，有“宁吃一碗辣子豆腐，不吃十碗席”之说。
