蕨根粉是从野生蕨菜的根里提炼出来的淀粉。是直接将蕨菜根部洗涤、捣碎、过滤、晒干而成，保留了蕨菜根里大部分营养，对人体有较大的保健作用。《本草纲目》载“蕨根祛热解毒，利尿道，令入睡，补五脏不足”。 早在上世纪40年代有研究发现蕨菜的致癌风险。1983年日本科学家指出，蕨菜中有一种叫做“原蕨苷”的天然毒素，它有很强的致癌性，国际癌症研究机构（IARC）将蕨菜归为2B类致癌物，与氯仿、敌敌畏、硝基苯等物质归在一起。但蕨菜中不同部位的原蕨苷含量也有很大差异，叶部的“原蕨苷”含量约是根部的10倍。而且，蕨的叶部位在经过浸泡漂焯、蒸煮煎炒后，原蕨苷的含量也会大大减少，最多可减至90%。所以，处理得当的蕨菜也不一定有很大风险。
