蒸酒,是云南怒江两岸的怒族和僳僳族对烧酒的称呼。蒸酒之名,缘自酿造中以蒸为主要工序。蒸酒的首选原料为玉米,也有高粱。稻谷、荞、粟。制作过程与彝家小锅酒大同而小异。浸泡原粮、蒸熟酒饭、贮存发酵的程序悉同前者。蒸制烧酒时,使用的器具则有所不同。怒族、僳僳族所用的甑子是用老树原木挖空而成,甑子的中上部留一小孔插上细竹管,是为出酒槽。锅底加热时,酒气上升遇冷凝聚为酒,落入酿中的接酒器中,再通过出酒槽流出,即为成品蒸酒。先出者度数高,酒劲大;随着蒸烤时间的推移,酒度渐次降低,越后者味越寡薄。
