茎瘤芥又名青菜头、茎用芥菜，属十字花科，芸苔属，芥菜种叶芥亚种，大叶芥变种的变种。其最初由野生芥菜进化而来，其进化次序是野生芥菜→芥菜→大叶芥→笋子芥→茎瘤芥。茎瘤芥是茎用芥菜中的一类，其显著特点是茎部发生变态，上面着生若干瘤状突起，形成肥大的瘤状茎(俗称瘤茎)，瘤茎经过专门腌制加工便成榨菜。 2019年11月，涪陵青菜头上榜中国农业品牌目录。
