纳豆菌通常为(0.7-0.8)um×(2.0-3.0)um,革兰氏阳性。生长在葡萄糖琼脂的细胞原生质染色均匀。芽孢椭圆形或柱状,中生或偏中生,即使孢囊膨大,也不显著,有鞭毛,能运动。生长温度最高为45-55℃,最低为5-20℃。孢子耐热性强。
纳豆芽孢杆菌(Bacillus natto)是从日本传统食品纳豆中分别出来的芽孢杆菌,其原始菌株与枯草芽孢杆菌雷同,是枯草芽孢杆菌的一个亚种,属于好氧菌。
