凤爪也称“鸡掌”“鸡爪”“凤足”。多皮、筋,胶质丰富。常用于煮汤,也宜于卤、酱。如:卤鸡爪、酱鸡爪。质地肥厚的还可煮熟后脱骨拌食,如:椒麻鸡掌、拆骨掌翅,皆脆嫩可口。在美食家的菜谱上把鸡爪称做凤爪,在南方,凤爪可是一道上档次的名菜,其烹饪方法也较复杂。它富含谷氨酸,胶原蛋白和钙质,多吃不但能软化血管,同时具有美容功效。经过多种方法制作出来的菜肴风味各异,深受欢迎。
