三杯源自江西，相传为一江西籍狱卒因狱中条件所限，只使用了甜酒酿、猪油、酱油各一杯炖制鸡块给文天祥食用故而得名。后来演变成为客家菜常见的料理手法。料理过程中用到一杯麻油、一杯酱油、一杯米酒，故得名。常用三杯料理的食材是鸡肉和小卷。另外，要作出成功的三杯，关键的材料还有九层塔、姜和蒜头。
