Problem is you guys force cows to eat corn instead of grass, I even remember as a kid during my first vacations in the US when some waitress at an upscale restaurant was bragging about their AAA grade corn-feed beefsteak, which was only slightly less chewy than leather.
The buffalo ribs, on the other hand, performed very well, and were to beef ribs what buffalo steak is to beefsteak: leaner and thus lacking some of the juicy flavor and mouth feel that comes from the marbled fat in beef, but making up for it with the rich added slightly gamey flavor of buffalo.
