胶东菜因起源于福山,故又名“福山菜”,也叫“烟台菜”。传入青岛,青岛菜承袭福山菜而发展,自成一派。福山素有“烹饪之乡”盛名,谚云:“要待吃好饭,围着福山转”。福山烹饪业历史悠久,技术代代相传,明清大批厨师享誉北京,此后福山厨师在国内外各处开业,遂使福山菜风味传遍天下。大连菜为代表的辽南菜系亦属于胶东菜。
济南菜擅长炸,烤,煎,炒,而胶东菜则以其烹饪海鲜的鲜淡而闻名。
